RECIPE: Balmonds Skin-Glow Goji & Lemon Energy Balls

We are beyond thrilled to have partnered with Gemma Phillips-Ogston, founder of Gem's Wholesome Kitchen, for this special Balmonds-themed recipe! Gem is an author and plant-based chef, who has created this wholesome, vegan skin-food recipe for us, featuring a shared Balmonds ingredient: hemp seed oil.

Gem believes food should be full of colour and goodness to boost your mood and your health, and that food as a means of self-care has the power to nourish, comfort and bring joy.  In developing the Skin Glow Goji & Lemon Energy Balls recipe, Gem took inspiration from one of our favourite skincare ingredients, hemp seed oil:

"I loved creating these 'Skin Glow Goji & Lemon Energy Balls' for Balmonds! I used some of my favourite ingredients which are packed full of nutrients to give your skin a glow. Star of the show here has to be hemp seed oil which Balmonds use in many of their products. Did you know that hemp seed oil can actually balance the oil production which can help prevent breakouts? Hemp seed oil also contains vitamin F and fatty acids such as oleic and linoleic acids, which play an important role in preventing the signs of ageing on the skin and reducing fine lines and wrinkles!"

These energy balls are so delicious, very simple to make and 100% plant-powered.

INGREDIENTS

  • 250g pitted and packed Medjool dates

  • 150g raw unsalted almonds (swap the almonds for 150g sunflower seeds to make this recipe nut-free)

  • 150g dried goji berries

  • 100g sunflower seeds

  • 100g hulled hemp seeds

  • 2 tablespoons hemp oil

  • 2 tablespoons maple syrup

  • 1 pinch of sea salt

  • 1 tablespoon lemon juice

  • 1 tablespoon lemon zest

METHOD

1. Soak almonds in water, and goji berries in lemon juice + zest for 10 minutes
2. In a food processor or high powered blender combine dates, soaked berries with the juice and the drained almonds, and process until the mixture is mostly smooth and there are no large chunks of either ingredient
3. Add in the sunflower and hemp seeds and run the food processor until they have been incorporated and broken up a bit, about 30-45 seconds
4. Slowly add the hemp oil and maple syrup
5. Carefully remove the mixture from the food processor and roll it into 18-20 bites
6. Store in a sealed container in the fridge for up to 1 week, or in the freezer for up to 6 weeks
